Delicious but also created in support of a good cause, your purchase supports 'Tria Corda', a voluntary organisation in Lecce created in 2012 to make dreams come true. A pediatric charity set up to benefit children in the region, the organisation provides specialist care within the local vicinity, meaning that frequent and ardous travel by family is avoided. As well as working to improve the quality of life of young patients, the charity fosters research by collaborating with leading Italian and European organisations.
Made with a few high-quality ingredients - such as 100% Italian flour, fine French butter, eggs, ten-year-old natural yeast (created by apple fermentation), candied fruit, oranges, and lemons - these are enough for Zéphyr Restaurant's chef Alessandro Pascali to create an exquisite artisan panettone.
His signatures are the Panettone Classico - simple and delicate, naturally leavened for more than 20 hours, with candied fruit and almonds - or the Panettone ai Tre Cioccolati - white, milk, and dark Guanaja with a rich taste and pleasant meltiness.
