Drawing on a long-standing culinary tradition that Pascali has viewed through a contemporary lens, his cuisine combines Apulian products with French, Moroccan and Oriental flavours, working in perfect harmony with the history of the Fiermonte-Filali family.
Pascali, who gained international acclaim working with Michelin-starred names such as Alain Ducasse, Carlo Cracco and Stefano Baiocco, has returned to his native Salento with a broader mindset and that unique blend of personality, precision, flair and creativity that makes each of his dishes a journey of its own.

As well as dining experiences, when visiting us in La Fiermontina Ocean in Morocco you can attend cooking classes that teach you to cook using local recipes and ingredients, including tajines, couscous and other specialties, using the organic produce grown in our garden.
