Starting March 14th, the refined cuisine of the restaurant, nestled among the centuries-old olive trees and monumental sculptures of La Fiermontina Luxury Home, will be entrusted to the talent of young chef Antonio De Carlo. Born in 1996, with a wealth of experience gained in some of Italy's Michelin-starred establishments, he brings with him a culinary philosophy that captivates from the very first taste. His story began among pots and flavors, when, as a child, he loved ingredients more than toys. Guided by the mentorship of Maestro Alfredo De Luca, he adopted the mantra "head down, high performance" as his life philosophy. His cuisine is essential yet never trivial, a journey through authentic flavors and surprising pairings. He has a deep love for spices and Eastern influences, allowing each ingredient to find its place, evoking emotions in every dish. Zéphyr Restaurant is the perfect place: few tables, soft lighting, and an intimate atmosphere that enhances the pleasure of gastronomic discovery. In the ancient olive grove, among the sculptures of Jacques Zwobada, René Letourneur, and Fernand Léger, history and art intertwine with a passion for food.
